Thyme for a Drink

For cocktails:

8 ounces apple cider

4 ounces bourbon

4 tablespoons honey-thyme simple syrup

4 teaspoons lemon juice


For the simple syrup:

½ cup sugar

½ cup honey

1 cup water

10 sprigs fresh thyme


In a small saucepan, combine syrup ingredients. Heat over mediumhigh heat, stirring occasionally until sugar is dissolved. Take off the heat and let sit for 30 minutes. Strain through a fine sieve to remove any thyme leaves. Store in refrigerator until cooled.


To make the cocktail:

Fill a cocktail shaker with ice. Add syrup, bourbon & apple cider to shaker and shake until well mixed. Add lemon juice and shake again. Pour over ice and garnish with thyme sprigs and apple slices. Serves 2. Please drink responsibly, 21+ only.
